
This is one of my all time favorite recipes.. As you can tell below, I’m no chef.. But there’s really no way to mess up this recipe. Use any veggies you like and any amount. The only thing that you will NEED is 3 wedges of light laughing cow cheese.

Ingredients
- 1 package chicken sausage (any kind.. I prefer chicken apple)
- 1/2 onion – chopped
- 1 zucchini – chopped
- 1/2 cup peas
- 2 tomatoes chopped (or handful cherry tomatoes sliced in half)
- 1/2 bell pepper – any color you like
- 3 wedges light laughing cow cheese
- SPG – (salt, pepper, garlic) season to your liking
- Cooked rice
- *Optional – grated Parmesan cheese when serving

Preheat oven to 400 F.

Prep everything and throw into a deep cast iron pan or baking dish (except rice)

Cook covered for 40 minutes, then uncover and cook an additional 5 minutes.

While meal is cooking, boil your rice per package directions.

Place rice into bowl and cover with sausage and veggie bake. Top with fresh grated Parmesan if you would like! – side note* If you’re like me, Parmesan is lactose intolerant friendly.
