
This is one of the family favorites in my house! The one my husband yells “add this to the recipe book honey!”
You can also use whatever vegetables you want. It’s a great way to use those *almost* expired veggies that are sitting in your fridge that you don’t want to waste.
I usually measure to my heart’s content, so do what works for you!
I originally got this recipe from an old friend’s dad about 8 years ago.. and I make it at least every other week. That’s how good this is!

Ingredients
- 1 lb. ground Italian hot sausage
- 1/2 bell pepper (any color you like)
- 1 zucchini
- 1/2 onion chopped
- cherry tomatoes
- garlic (to your tasting)
- 1/2 box orzo pasta
- *Optional: Parmesan cheese, chili pepper flakes
Steps
- Boil your orzo according to directions on the box
- cook sausage on skillet until there’s no more pink. Set aside on plate with paper towel to soak up grease.
- In same pan with the sausage drippings, on medium-low heat add garlic. Cook for One minute. Add onions, cook for 3 minutes. Add bell pepper and zucchini (cook until fork can go through – about 5 minutes. Add cherry tomatoes and cook until soft – about 3 minutes. (drizzle with olive oil throughout cooking if you need more oil.)
- Once all of the vegetables are cooked, mix sausage back in to heat up: 1-2 minutes.
- Place desired amount of orzo in bowl, top with sausage and veggie mix, drizzle with olive oil.
*Optional, top with parmesan cheese and chili pepper flakes
